tomato sauce with fennel


• ingredients:
2 garlic cloves, crushed
1/2 cup chopped onion
3 tbsp. fresh or 1 1/2 tsp. dried basil
4-6 fennel seeds, crushed
1/4 cup olive oil
1 tbsp. salt
1 tbsp. honey
1-2 lb. can Italian plum tomatoes, drain and reserve liquid
8 oz. tomato paste

• method:
1. Saute onion and garlic in oil. Add half the tomatoes and the honey, salt, basil, fennel, and freshly ground pepper to taste.
2. Cook for a few minutes and add remaining tomatoes, their juice, and the tomato paste.
