teff soup or stew

• ingredients:
1/3 to 1/2 cup uncooked teff (or 1 to 1 1/2 cups cooked teff)
5 to 7 cups water
1/4 cup tamari soy sauce (not if sensitive to soy)
1 large onion, halved and cut into thin slices
1/2 head cabbage, chopped or shredded
1 tablespoon olive oil (1 teaspoon roasted sesame oil optional)

• method:
1. Combine teff, water, and tamari in a deep saucepan; simmer.
2. Heat a skillet.
3. Add olive oil and onions.
4. Saute until onions begin to become clear.
5. Add cabbage and saute lightly.
6. Add toasted sesame oil.
7. Add vegetables to sauce pan.
8. Simmer till done.
9. Add herbs and pepper to taste if desired.
