hummous
ingredients:
1 cup garbanzo beans
1/3 cup tahini (sesame butter)
2 cloves garlic, chopped
1/3 cup parsley, chopped
juice of 1 lemon (can omit and substitute cooking water)
3 scallions, chopped
1 tsp. cumin
1 tbsp. tamari
1/8 tsp. pepper
cayenne pepper (optional)
method:
1. Soak beans overnight in 5-6 cups water.
2. Cook well (3 hours or more) until mushy. Drain, reserving liquid.
3. Mash beans. Blend in tahini. Add rest of ingredients, saving some scallions for garnish. Thin with saved bean water to desired consistency.
4. Allow the hummous to set before serving to enhance blending of flavors. Use as a vegetable or bread dip, or sandwich spread.
variation:
1. Omit tamari, cumin and cayenne and substitute turmeric to taste.
2. Substitute juice of one orange for juice of lemon or add virgin olive oil to taste.
