fresh ginger dressing
ingredients:
1 inch piece of fresh ginger
2 cloves garlic
2/3 cup olive oil
juice of 1 lemon
2 tbsp. raw tahini (sesame butter)
2 tbsp. tamari
method:
1. Cut ginger into 6 or 8 pieces. Place in blender with garlic, and cover with a little oil.
2. Blend to a fine paste.
3. Add rest of ingredients, and blend again until smooth. For a thinner and less oily dressing, add water. For a thicker dressing or dip, add tahini.
