miso soup
this soup helps to eliminate excess mucous from the body, can be eaten daily and helps maintain the friendly bacteria in the intestines
ingredients:
1/2 cup dried wakame OR arame
4 cups water
2 tbsp. miso
1 scallion
1 1/2 cup assorted, cut vegetables: onions, carrots, cabbage, cauliflower, leeks, broccoli, daikon, Brussel sprouts, squash, peppers, etc.
1/2 cup cooked leftover grain: barley, rice, buckwheat, millet
method:
1. Soak seaweed for 5-10 minutes until soft, cut into small pieces. Bring water to a boil and add softened seaweed.
2. While water returns to a boil, add vegetables to the broth and simmer until soft.
3. Add cooked grain and stir well.
4. Thin miso with some of the warm broth and add back to the soup; do not boil miso. Garnish with chopped scallion.
