lentil soup

• ingredients:
2 cups raw lentils
7 cups stock or water
4-6 cloves garlic, chopped
1 onion, chopped
1 carrot, chopped
1 small potato, chopped
1 small daikon radish, chopped
2 celery stalks, chopped
2 bay leaves
1 tsp. each: dill, basil, oregano, cumin
4 tbsp. tamari (soy sauce) or less juice of 1 lemon
fresh greens, washed and chopped: spinach, kale, beet or dandelion greens

• method:
1. Cook lentils, covered, in the stock or water for about 1 hour, or until soft.
2. Add all remaining ingredients except lemon juice and greens.
3. Bring to a boil, then turn off heat and let set for about 10 minutes with cover on until vegetables have just lost their crispness.
4. Add lemon juice and greens just before serving.
