Spanish rice with soy cheese
ingredients:
3 cups cooked brown rice
1 onion, chopped
4 stalks celery
1 large green pepper
2 cloves garlic
1 tbsp. oil
1 tsp. chili powder
1 tsp. cumin
1 cup fresh or frozen corn
1 cup chopped tomatoes
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
1/2 cup sunflower seeds
1 cup grated soy cheese (optional)
method:
1. Cook rice. Saute onions, celery, pepper and garlic in oil. Add chili powder and cumin.
2. When fragrant, add tomatoes, corn, sunflower seeds, salt, oregano and pepper.
3. Mix well with rice and cover with cheese.
4. Cover and bake for approximately 30 minutes at 350° F.
